Mom's Old-Fashioned Potato Salad

| 2 lb. red potatoes, cooked, peeled and cubed (about 6 c.) |
| 4-6 hard-cooked eggs, chopped |
| 1-1/4 to 1-1/2 c. reduced fat mayonnaise |
| 1/2 c. sweet or dill pickle relish |
| 1 Tbsp. prepared mustard |
| 1-2 Tbsp. dried minced onion |
| 1/4 tsp. salt |
| 1/4 tsp. pepper |
Directions:
1. Place potatoes and eggs in a large bowl. In a separate small bowl combine mayonnaise, pickle relish, mustard, onion, salt and pepper; mix to combine.
2. Add mayonnaise mixture to potatoes and eggs and stir to mix. Garnish with reserved hard-cooked egg slices or pickle slices.
